Vegetarian croque – A tasty meatless option

Need a quick snack that will fill that empty spot in your tummy? Try this mouth-watering vegetarian croque. It is the vegetarian answer to monsieur croque and worth every bite! The classic croque is an easy sandwich that ticks many boxes. It is quick and easy to prepare and furthermore tastes heavenly.


This brunch classic or mid-afternoon nibble is a comforting light meal before turning in for the evening, or for a midnight snack. Whichever time or occasion you choose to whip together this vegetarian croque recipe, there is never an inappropriate time to enjoy this bite oozing cheese and flavour.


This vegetarian croque recipe is a favourite at Hotel 41 in the United Kingdom which is part of the Red Carnation Hotel Collection known for its excellent accommodation and mouth-watering dishes.     Ingredients




    • 2 large slices good quality granary bread




    • 2 – 3 slices Cheddar cheese




    • 2 slices buffalo tomato




    • 1 cup cooked mushrooms (optional)




    • 10 g butter (room temperature)






    Method



    • Spread the butter on both sides of the bread, making sure it reaches all four corners.

    • Layer the cheese and tomato slices over one slice of bread, as well as the mushrooms, if using.

    • Place the other slice of bread on top to create a sandwich and toast for about 3 minutes.

    • Remove once toasted, cut off the crusts and divide into four.
